I usually make people beg me for this recipe, but I have changed my mind, and thought of some things the world needs to know, and making Almond Roca is one of them. I also probably won’t have to worry about attending the same Christmas party as you.

You will want to ensure that you have a Candy Thermometer with an accurate reading. Other than that, this is simple and worthy to give as Christmas Gifts to your neighbors and family.

How to make Homemade Almond Roca

1 1/2 Cups Sugar
1 Cup Butter
3 T Water
1 T Light Corn Syrup
1 t Vanilla
12 oz Chocolate Chips
1 cup Toasted almonds

Preheat oven to 325 degrees. While preheating the oven, chop your almonds with a sharp knife or pulse them in your food processor. Lay on a cookie sheet and toast for about 5 minutes, and set aside.

Prepare a 9×13 pan by spraying it with non-stick spray.

In Medium Pan over medium heat, boil the first four ingredients. Stir until butter is melted. Place a candy thermometer in a pan and leave until 310 degrees stirring a few times, but watch closely once it reaches 290 degrees. Once the temp is at 310, turn off the heat and add vanilla. Stir quickly. Pour over the prepared pan and sprinkle chocolate chips. Cover for two minutes. Take a rubber spatula and smooth all the chocolate. Sprinkle the top with Almonds.

Variation: You could place the almonds on the bottom of the 9×13 pan and sprinkle the top with almond dust and what I do.
